Milk is made up of 80% casein and 20% whey. In casein there are five genetically determined fractions: ?s1, ?s2, ?, ?, and ?, the first four are present in milk usually in the ratio 3:0.8:3:1; the ? is a peptide fragment deriving mainly from the proteolysis of ? casein by plasmin. In the specific protein fractions there are the so-called "growth factors" which settle at the intestinal level in "release" form, i.e. with prolonged release.
